When I lived back in Russia I would make pizzas every now and then and I must admit no one was impressed. Until last summer.
My parents don’t really eat a lot of bread, pastas, lasagnas, so they would only taste a tiny slice here and there, but my brother loves pizzas. What he told me last time really blew my mind. I always thought that I cook very nicely and when he told me that my pizzas used to be “mediocre” my jaw dropped. When he said that the pizza that I made that time was “really good”, it was pretty much the best compliment he’s ever given to my cooking adventures.
Since that time I started experimenting even more and came up with a recipe for a Perfect Pizza.

Secret Ingredients for the Perfect Pizza
2 Medium pizzas Serve 4 pizza lovers.
Crust:
2 eggs
1/4 glass of milk
1/4 glass of water
Favorite spices
Flour
Semolina
Sauce:
Ketchup/Tomato Sauce
Hellmans Mayo
Chopped Garlic
Jalapenos
Veggie Spice
Topping:
Red Onion
Tomato
Peppers
Pickles
Mushrooms
Chilis
Lots of Cheese
Directions: How To Make that Perfect Pizza
I’m sure everyone knows the basics:
Mixing eggs, a bit of milk, some water, (secret #1 – I add some of your favorite spices so the crust is not dull and has some flavor) and mix it all well.
When the mixture is nicely blended, add flour And Semolina (secret #2).
Semolina?
Once I started making pizza and noticed we were out of flour but had a full bag of semolina (i bought it long time ago by mistake). I thought, well, I already mixed some ingredients and didn’t wanna throw it away, so I decided to try semolina instead – it is made of wheat after all.
To me the crust was perfectly hard and that’s the way I loved it. To everyone else it was a bit too hard, so for the next one I decided to use a combo of Flour and Semolina.
It’s really up to you if you want to make your crust really hard or on a softer side, but I noticed that semolina just holds it better. Try it, you won’t regret 😉
I later found out that Semolina gives you dough “an authentic flavour and texture” (according to Jamie Oliver)
Then you just roll in, smear some oil/butter on your baking tray or a pizza stone (if you have one) and put it in the oven on 240C for 10-15 minutes until the crust hardens. (secret #3).
While your crust is baking, you have some time to make a sauce.
For the sauce I mix Ketchup or Tomato Sauce with my favorite Mayo (Hellman’s is by far my favorite, but I want to try and make my own version without any preservatives and other not so healthy stuff (check this recipe for a homemade mayo).
Secret #4, I add veggie spices to my sauce to bring even more flavors to the pizza. I also add some jalapeños for a bit of punch and some chopped garlic.
You can also chop all your veggies while your crust is getting ready in the oven.
By the time your sauce is ready, your crust should be nice and crispy and you can take it our of the oven, smear your sauce over
and put your favorite veggies on. I usually go for red onions, tomatoes, peppers, mushrooms (not this time because we ran out of them), pickles, and lots of cheese.
Then, put your pizza back in the oven until the cheese melts, and after that (secret #5) grill your pizza for a few minutes until you get that nice crispy brownish cheese.
