Hi friends! Sjoe, it’s been forever. I’m so sorry I’ve been quiet but I had a corporate job that was draining me and taking all of my time.
Now I’m job-free for about 2 weeks now so I can finally get to the things that I wanted to do – like sharing some vegan meal ideas with you all.
This super quick and easy one Vegan Dinner Recipe Idea Has
🥔Airfried sweet potatoes
Here is the video for you to see how I do it, but if you don’t want to watch the video, here are the directions for you all 🙂
For the family of 3
- 4 Sweet potatoes
- 3 corns
- Handful of cherry tomatoes
- 3 Persian cucumbers
- 1/2 of Yellow pepper
- 1/5 of red onion
- Salt, Rosemary, Onion and Garlic Spice
🥔Air fried sweet potatoes
- Slice Potatoes and steam them for 30 minutes until soft
- Add some of your favorite spice, I used Salt, Rosemary, Onion and Garlic
- Sprinkle some Oil
- Cook in the air fryer at 180C or 356F for about 10 minutes or longer depending on how crispy you want them
*Before I air fry my potatoes I always steam them so the air-frying takes as little time as possible.
Please don’t hate, but traveling around the world, living in various countries opened my eyes to the beauty of a true Russian Salad.
I love leafy greens, don’t get me wrong, they are very healthy and so good for you, but ordering a vegetable salad and being given chopped lettuce with 2 halves of cherry tomatoes, 1 slice of baby cucumber and a little curl of an onion – I’m sorry but I can’t call it a vegetable salad.
So for this Russian Vegetable Salad
- Half your tomatoes
- Slice cucumbers
- Add onion to taste
- Slice some pepper
- Add your leafy greens (I used a mix of greens)
- Parsley, Cilantro, Basil
- Salt and Pepper
- Sprinkle some Olive Oil
Very easy and you can definitely call it a VEGETABLE SALAD.
Pretty self-explanatory. I steamed my corn at the same time as I steamed my sweet potatoes.
